Zucchini & Tomato Pasta

What do you do when your zucchini and tomatoes start ripening in your garden? You can make this easy pasta.





Zucchini & Tomato Pasta


2 Tbs olive oil

1/2 shallot

1/2 lb Italian Sausage

2 zucchini, diced

2 large tomatoes, diced

1/4 cup Parmesan Cheese

Salt & Pepper

1/2 lb pasta

Basil

Italian Parsley, chopped


Saute shallots in 2 Tbs olive oil. Brown Italian Sausage and break up into pieces. Add zucchini and tomatoes and sauce until softened. Add Parmesan Cheese. Season to taste with salt & pepper.


Cook pasta in salted water 1 minute shy of package instructions. Drain and add to sauce. Add chiffonade basil and chopped Italian parsley.
