Chocolate Cherry Cookies

Several years ago, while staying at the Trumpeter Inn on San Juan Island, the hostess made Dark Chocolate Covered Cherry Cookies. These were so good and she was willing to share the recipe. I just love the dried cherries in the cookies.



Dark Chocolate Covered Cherry Cookies

1/2 cup unsalted butter

1/3 cup unsweetened cocoa

1/3 cup dark chocolate cocoa

2 large eggs

1 cup sugar

1/2 cup firmly packed light brown sugar

1 tsp. salt

2 tsp. vanilla extract

2 cups all purpose flour

1 ½ tsp. baking powder

1 cup dried cherries

2/3 cup mini chocolate chips

1/4 cup powdered sugar


Preheat oven to 350 degrees.


Microwave butter and both cocoas in glass bowl on high for 45 seconds. Whisk mixture until smooth and set aside.


Beat together eggs, sugars, salt and vanilla until smooth. Gradually add chocolate mixture until well blended.


Whisk flour and baking powder together then add to chocolate mixture until well blended.


Stir in cherries and chocolate chips.


Place powdered sugar in shallow bowl. Scoop dough and form balls; roll in powdered sugar.


Arrange on parchment-lined baking sheets. Bake 10-12 minutes.


Cool cookies for 1 minute before transferring to rack.
