My husband found this recipe for Solianka many years ago and although the ingredients don't sound good, the Russian beef stew is quite delicious. I made some modifications.
Solianka
4 Tbs oil
1 medium onion (I dice but some thinly slice)
4 cups beef broth
12-oz bottle dark ale
1 lb beef stew meat, cut into 1/2 inch cubes
2 bay leaves
14 oz can diced tomatoes
2 Tbs tomato paste
1 lb smoked sausage, cut into 1/2 inch rounds then halved
4 cucumbers, peeled, seeded and sliced
20 pitted prunes, quartered and soaked in hot water
24 Kalamata olives, pitted and sliced
2 tsp capers
Salt & pepper
Lemon slices, fresh dill or parsley, sour cream or yogurt for garnish
Heat the oil in an Instant Pot and saute the onions until soft. Add the beef broth and dark ale. Bring to boil. Add the beef, bay leaves, tomatoes and tomato paste. Use stew setting for 20 minutes.
After releasing the pressure, open the lid and add the sausage, cucumbers, prunes, olives and capers. Cook on saute for an additional 20 minutes until the cucumbers are soft. Salt & pepper to taste. Garnish.
