Soft Boiled Eggs with Jamon & Potatoes

This is a very good way to serve the jamon.



Soft Boiled Eggs with Jamon & Potatoes


2 large potatoes, peeled, boiled and cut into 1/2 inch cubes

Garlic salt

Smoked paprika

Oil

Sliced jamons

2 eggs

Chives


Sprinkle garlic salt & smoked paprika to taste over the potatoes. Heat oil in pan and pan fry potatoes until crisp.


Bring water to boil and place eggs in boiling water. Boil for 6 minutes then remove eggs and place in cold water.


Place potatoes on plate, layer with jamon and top with soft boiled potatoes. Sprinkle with chives.
