Opo is a squash low in calories and rich in fiber. It has Vitamin C, folate, calcium, iron, zinc and B vitamins, It doesn't have much flavor so it takes on the flavor of what you add.
To prepare, peel the skin and discard the seeds.
Opo & Shrimp Soup
2 lb opo
1/4 cup dried shrimp
1 lb shrimp, peeled, deveined and chopped
Chicken broth
Sesame seed oil
Salt & pepper
Add opo and dried shrimp to chicken broth. Boil and simmer until opo is tender.
Add shrimp and cook until pink. Add sesame oil, salt & pepper to taste.
