There's also kale for 99 cents a bunch at Grocery Outlet. My favorite thing to do with kale is to make kale soup, Portuguese style, with a few modifications.
Kale Soup
3 Tbs. olive oil
1 lb. linguica (2 links)
2 bunches kale, stems removed and chopped
4 cloves garlic
3 cans beef broth
5 cans water
4 bay leaves
2 tsp. rosemary
1 Tbs. marjoram
3 smoked ham hocks
2 potatoes, peeled
1 thick slice prosciutto, cut into cubes
½ cup barley
1 cup macaroni
Brown linguica in olive oil then remove. Slice into ½ inch pieces. Saute kale and garlic in oil. Add beef broth and water. Add herbs, ham hocks and potato (chopped into large pieces). Bring to boil then cover, reduce heat and simmer. Remove potatoes after 1 hour and puree in food processor. Return to pot and add barley and macaroni. Cook 30 minutes then add prosciutto and sliced linguica.
If I want it less fatty, I leave the linguica out.
