Kale salad is so good and it is so healthy for you.
Kale Salad
1 bunch kale
Dried cranberries
Goat cheese
Pine nuts, toasted
Dressing:
3 Tbs olive oil
3 Tbs apple cider vinegar
1 Tbs Dijon mustard
1 tsp honey
Salt & pepper
Strip the kale leaves from the stems and chop.
Make the dressing and add to the kale. Massage by hand and refrigerate overnight.
Add the cranberries, goat cheese and pine nuts before serving.
