Gazpacho

I love gazpacho in the summer months. It took a long time for my tomatoes to ripen this year but I was fortunate to get some from friends.




Gazpacho


4-5 ripe tomatoes, quartered

1/2 bell pepper

1/2 cucumber, peeled and de-seeded

1/4 onion

3 cloves garlic

1/2 tsp cumin

1 tsp salt

2 Tbs white vinegar

3 Tbs extra virgin olive oil


Blend the tomatoes, bell pepper, cucumber, onion and garlic until smooth. Add cumin, salt & white vinegar. Blend then add olive oil in a drizzle.


Serve with chopped eggs and cubed jamon.
