Since I live in California and there are no Levain franchises in California, I looked online for a copycat recipe. After trying several and making small changes, I think I came up with a close copy.
Copycat Levain Cookies
1 1/2 cups all-purpose flour
1 1/2 cups bread flour
3/4 tsp salt
3/4 tsp baking powder
3/4 tsp baking soda
1 tsp cornstarch
1 cup butter, softened
1 1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 egg yolk
2 cups chocolate chips
2 cups walnuts
Preheat oven to 380 degrees
Mix all-purpose flour, bread flour, salt, baking powder, baking soda and cornstarch in bowl. Set aside.
Cream butter with both sugars for 2 minutes. Add eggs and egg yolk and mix until fluffy. Add flour mixture and mix. Add chocolate chips and walnuts.
Form cookie into balls (I use 4 oz but Levain uses 6 oz). Refrigerate dough balls for 1 hour. Bake for 11-12 minutes.
Let cool. Center will be slightly gooey.
