We loved the Kimo Pie from Duke's so much, we tried to recreate it at home.
We used Biscoff cookies for the crust. Pulse in food processor until small crumbles. Add 4 Tbs melted better. Press the mixture into a 9-inch pie pan. Use a measuring cup to pack the crust. Bake at 350 degrees for 5 minutes.

Duke's didn't use bananas but I like sliced bananas on the bottom. Only do this if you plan to eat the pie right away. After a while, the bananas freeze and the frozen bananas are not as good.

I used Mrs. Richardson's Hot Fudge sauce to drizzle over the bananas.


I found these honey roasted macadamia nuts in Maui. Place 1 cup in a ziplock bag and pound with rolling pin to form small pieces. Add to 1 quart softened French Vanilla ice cream.

Pour ice cream mixture into pie crust and freeze.

Drizzle the top with more hot fudge and honey roasted macadamia nuts. Add whipped cream if desired.
