Chicken & Dumplings

My husband loves chicken & dumplings. He likes the dumplings fluffy and dry on the inside, just the way his mom made them. Here's my version. It's more of a stew than a soup.




Chicken & Dumplings


1 Tbs oil

1 small onion, chopped

2 stalks celery, chopped

1 small carrot, peeled & chopped

1 Tbs flour

3 cans low-sodium chicken broth

1 sprig thyme

1 zucchini, chopped

1 cup rotisserie chicken, shredded

Salt & pepper


Dumplings:

1 cup flour

2 tsp baking powder

1/2 tsp salt

2 Tbs chopped Italian parsley

1/2 cup milk



Heat the oil in large pot and saute onions. Add celery and carrot. Add flour and stir until mixed. Add chicken broth and sprig of thyme. Boil, then cover and simmer for 15 minutes. Add zucchini and chicken and simmer for another 10 minutes. Add salt & pepper to taste.


To make the dumplings, mix flour, baking powder and salt. Add parsley and mix. Add milk. Drop by tablespoonful into pot, bring to boil then cover and simmer on low for 15 minutes.
