Vigo is a large city with the largest fishing fleet in Europe and the 2nd largest fleet in the world (2nd to Tokyo). There's a lot to see in town. I recommend at least half a day.
The Concatedral de Santa Maria is located in the historic quarter or Cidade Vella. It's a Neoclassical church built on the remains of a Gothic church that was burned down by Francis Drake.
Porta do Sol and El Sireno (The Merman). The statue of the half man/half fish sits on a very tall pedestal. It was installed in 1991 and has become the symbol of modern Vigo.
"O Nadador" (Or Swimmer) by Francisco Leiro. It's located in Praza da Estrela.

Walk along the waterfront and you'll come upon the Monumento a Julio Verne.. It is a tribute to Jules Vernes, who devoted a chapter in "20,000 Leagues Under to Sea" to the Bay of Vigo.
If you have additional time, you can climb to the Castello do Castro (a hilltop fortress) or take a boat to the Islas Cies and do some hiking. The Islas Cies are a series of 3 islands off the coast of Vigo. It's a 45-minute ferry ride each way.
