Segovia is known for cochinillo (roast suckling pig). The Meson de Jose Maria claims to make the best in town. It's located at C. Cronista Lecea 11. I made reservations online: https://www.restaurantejosemaria.com/en/bookings/

Amuse bouche of pork liver pate--creamy and so good.

Gazpacho--€9. This was thick and had just the right amount of vinegar.

The star of the show. The cochinillo is brought whole.

It's so tender that it can be cut with a plate.

The cochinillo is so tender but has a crispy skin. It's pricey at €27. Unless you're a big meat eater, 2 people can share one portion.

Don't get the leg if you get grossed out with seeing the trotter..

We also ordered Morcilla (blood sausage)--€10. I forgot to take a picture. It was very good--fried and filled with rice.

We had a bottle of Quintaluna--€18.80. This was a nice Verdejo.

Broken plates decorate a wall of the restaurant.

Another place to have cochinillo is Meson Candido, near the Aqueduct.
