Pickled Tongue

I love the pickled tongue that is served in Basque restaurants in Bakersfield. It's actually not that hard to make. You can use beef tongue or pork tongue. The pork tongues are much smaller but they're also only 1/3 the price per lb.


Pickled Tongue


Tongue

Water

Charred onion


Marinade:

4 cloves crushed garlic

1/4 cup cider vinegar

1/8 cup vegetable oil

1 small bunch of parsley

Salt & pepper


Place tongue in Instant Pot and cover with water. Add charred onion--cut in half and brown in oil until charred. Cook on high pressure for 10 minutes.


Remove tongue and cool. Peel. Use meat slicer to slice the tongue thin.


Made the marinade then add to tongue. Do not leave in marinade for longer than 48 hours--it gets mushy.
